HOT HONEY COTTAGE CHEESE SCHNITZELS

Elevate the classic chicken schnitzel with this hot honey and cottage cheese topping that the whole family will love.
Ingredients
- 4 x chicken schnitzel breasts
- 4 serves frozen chips (approx. half a bag)
- 60g bag rocket and spinach mixture
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp salt flakes
- 4 tbsp cottage cheese
- 4 tbsp honey
- 1-2 tsp chilli flakes (to your taste)
Method:
- Preheat the oven to 200 degrees celsius
- Line 2 baking trays and place the frozen chips on one and the chicken breasts on the other
- Place the chips in first for a total of 30 mins, adding the chicken breast for 20 minutes
- Meanwhile, mix the salad with the olive oil, balsamic vinegar and salt flakes. Create the hot honey by combining the honey and chilli flakes
- Once the chips and chicken are cooked, assemble each plate with the spinach and rocket salad, chips and top the crispy chicken with 1 tbsp of cottage cheese and evenly spread the hot honey on top
