Pomegranate and violet granita cocktail

Part cocktail, part dessert – this Pomegranate Vodka Violet Granita is the perfect cocktail to make mum this Mother’s Day.

Ingredients (makes 8 cocktails)
  • 300g caster sugar
  • 4 cups cranberry and pomegranate juice
  • 1 cup vodka (optional)
  • Seeds of 1 pomegranate
  • Edible petals, to serve
Method:
  1. Pour sugar into 4 cups of water and bring to a boil, stirring until sugar dissolves. Simmer for 10 minutes or until slightly reduced, then pour into a bowl to cool down.
  2. Pour the juice into a container and add the sugar water. Freeze overnight until frozen.
  3. Remove from the freezer and scrape with a fork into crystals.
  4. Pour a shot of vodka (optional) into the glass and top with granita. Decorate with pomegranate seeds and edible rose petals.
