TOFU MEXICAN TORTILLA BOWL

Ready in less than 20 minutes, this delicious Tofu Mexican Tortilla Bowl comes in at less than $5 per serve.
Serves 4
Ingredients
- 4 large wraps
- 450g tofu
- 1 tbsp olive oil
- 2 tbsp taco seasoning
- 1 large romaine lettuce leaf finely chopped
- 1 large tomato
- 1 can of corn
- 1 can of black beans
- 4 tbsp Greek yoghurt
- 2 tbsp finely chopped chives
Method
- Preheat oven to 180 degrees
- Lightly spray an oven proof bowl with olive oil and fold in each tortilla
- Place in the oven and cook for 10 minutes or until sides start to brown
- Meanwhile, cut the tofu and coat with the olive oil and taco seasoning. Cook in a pan for 5 minutes, tossing on all sides
- Finely chop the romaine lettuce and tomato. Drain the corn and black beans
- Remove the crispy tortilla bowl from the bowls and assemble with the lettuce, corn, black beans, tomato, tofu, Greek yoghurt and chives
- Crack the sides of the bowl and enjoy like nachos!
