TOFU MEXICAN TORTILLA BOWL

Ready in less than 20 minutes, this delicious Tofu Mexican Tortilla Bowl comes in at less than $5 per serve.
 
Serves 4

Ingredients

  • 4 large wraps
  • 450g tofu
  • 1 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1 large romaine lettuce leaf finely chopped
  • 1 large tomato
  • 1 can of corn
  • 1 can of black beans
  • 4 tbsp Greek yoghurt
  • 2 tbsp finely chopped chives
 

Method

  1. Preheat oven to 180 degrees
  2. Lightly spray an oven proof bowl with olive oil and fold in each tortilla
  3. Place in the oven and cook for 10 minutes or until sides start to brown
  4. Meanwhile, cut the tofu and coat with the olive oil and taco seasoning. Cook in a pan for 5 minutes, tossing on all sides
  5. Finely chop the romaine lettuce and tomato. Drain the corn and black beans
  6. Remove the crispy tortilla bowl from the bowls and assemble with the lettuce, corn, black beans, tomato, tofu, Greek yoghurt and chives
  7. Crack the sides of the bowl and enjoy like nachos!
