Is it even Mother’s Day if you don’t have pancakes in bed?! For a no-fuss (yet indulgent) breakfast, you can’t go past the humble pancake. Easy, delicious, totally kid friendly (with dad or another adult supervising!) and easy to plate up beautifully for Mum!
Ingredients (serves 8)
8 tbsp margarine or butter
2 cups milk
½ cup cream
2 free range eggs
3 ripe bananas, sliced
2 cups plain flour
1 cup dark brown sugar
3 tbsp caster sugar
1 tbsp baking powder
1 tsp salt
½ tsp vanilla extract
Chopped nuts (of your choice) for decoration
Method
- In a large bowl, mix together your flour, caster sugar, baking powder and salt. Set aside.
- Microwave 4 tbsp of your margarine or butter in a bowl until melted. Add eggs and milk, whisking until blended.
- Make a well in your dry ingredients and slowly add the wet ingredients until you form a smooth batter.
- Spray a skillet with cooking spray (or grease with butter), then add ladles of batter (approximately ¼ cup of batter per pancake). Cook until bubbles form on top and then flip, cooking until the other side browns nicely.
- To make your caramel sauce, combine brown sugar, remaining butter and cream in a large jug. Microwave for 1 minute, stir, then microwave again for 30 seconds at a time. Total cook time shouldn’t exceed 2 minutes. When cooked add vanilla and salt and whisk again to form a smooth consistency.
- Layer a few pancakes on a plate, top with sliced banana, a drizzle of the caramel sauce and some chopped nuts.
